Simple Plov (Плов)


Plov is a traditional Uzbek and Russian dish.  A very simple version appears below.  A more traditional recipe can be seen here.



INGREDIENTS

  • 6 chicken legs or thighs, already cooked, with meat removed from bones
  • Rice - 1 1/2 cups, give or take
  • Carrots - 3 medium
  • Yellow onions - 1 large or 2 medium
  • Salt and pepper - to taste
  • Fry oil - Olive oil, butter or ghee - enough to coat the bottom of your largest pan plus a little extra
INSTRUCTIONS
Cut the meat into small chunks, about 1/2 inch.  Set aside and place back in refrigerator.

Chop the carrots and onions into thin slices, then sauteé them together on low heat until the carrots are tender.

While the carrots and onions are being sauteéd, boil the rice until soft with grains expanded, but with grains still distinct.

When the rice and carrots/onions are ready, mix thoroughly with the chicken, along with salt and pepper, then fry the mixture in your largest pan, until the rice is saturated with the fry oil and slightly brown.

Can easily be microwaved or re-fried later.
