INGREDIENTS
- 3 cups tomato juice
- 3 cups water
- 1/2 head of cabbage
- 1 cup chopped fresh green beans
- 1 cup fresh mushrooms chopped very small
- 3 stalks celery chopped thin
- 1 small yellow onion chopped fine
- 1 can chickpeas or beans (to use dried beans, see this link for bean preparation info)
- 2 vegetable boullion cubes
- salt and pepper to taste
INSTRUCTIONS
- Bring tomato juice and water to a boil
- Stir in boullion cubes
- Add chopped veggies and simmer 1 hour
Speaking as a natural-born carnivore, this is one of my
favorite veggie dishes.
Some veggie dishes have the right flavors and characteristic to satisfy
carnivore genes, and this seems to be one of them. At least for
me.
